Hello, my name is David Buggie and I am an Irish Engineer currently
working in the USA (I have been living in Connecticut for 2 years). My
job takes me all over the world and I spent 2001 in Alexandria, Egypt.
While there I made some good friends, I became especially friendly
with one of the Egyptian engineers and his fiance. During my time in
Egypt, the USA accepted applications for the Diversity Visa 2003
program. Both my Egyptian friend and his fiance applied for the visa.
In 2002 my Egyptian friend and his fiance got married and also they
were lucky enough to be successful in their application for a diversity
visa. They havebeen through the interview process in Egypt with the
US embassy and they are ready to come to the USA.
Besides getting the news that they succeeded in the visa application,
they also had the wonderful news that the wife of my friend is pregnant,
and the baby is due beginning of April 2004. They would like to
stay in Egypt to have the baby and then come to the USA but their
diversity visa will expire in March 2004 and the US embassy in Cairo
will not grant an extension. They are trying to figure out if it is possible
to come to the USA for a short time in January and then return
to Egypt to have the baby, I have called the BCIS and from
the information I got, I think once they come to the USA and
apply for a green card, work permit etc. they will not be permitted
to leave at least for a few months.
Obviously, they have some big decisions to make during this time and
I am trying to support them with any information I can provide.
I have been looking at the website "Islamic Centre of Connecticut"
and that is where I got your e-mail address. My friend in Egypt is very
open minded and has even been to the USA before (he spent a summer
in NY city while in college), however I am sure that moving from
Egypt to the USA will be a very strange experience for him and his
wife, is there someone involved with the Islamic centre who would
be prepared to share some information/tips about moving to the USA,
I think if they could communicate with someone who has been through
a similar experience then it would really make them more comfortable.
The other issue is whether there is anyone involved with the centre
who would have some immigration related information that maybe
could help them with their desire to have their first child in Egypt,
but at the same time not loose their diversity visa.

My name is Michael, and I am from England. I have recently spent three years living
and working in Egypt. It was Amazing!!! I first went to Egypt in 1999 for three weeks,
Nile Cruise, Hurghada, and Cairo. I fell in love with the country! I have family friends
there, so I got back to England, threw everything in the air, and March 2000, I went
to live in Nezlett Es Seman,Cairo with my friends family. Ended up working as Hotel
Manager on a Cruise ship on the Red/Med sea, as well as working on the Nile.
I have learnt the language, and can read Arabic a little. Travelled all over the
country on my own, by train, microbus and even 'kaboot'. Stayed in Minya,
Armant (Luxor), Aswan, Dakhaila, almost everywhere. I even get mistaken as
an Egyptian, as you can see by the photo. Have many, many good friends there,
who have welcomed me into their homes, and treated me as one of the family.
Such wonderful times. Enshallah, when work is better there, I shall return. As
the saying goes, 'once you have tasted the water of the Nile, you shall always
return' (I have drunk it, swam in it and washed in it!!)

I wonder if you might help a member of my family. Whilst in Egypt my Aunt
found that she could eat the bread where she stayed (she is currently ill
and finds the smell and taste of English breads makes her feel sick). The
hotel manager where she stayed let her have the recipe for the bread that
she enjoyed however I cannot find proportions of water and lemon juice and
vinegar (and also which kind of vinegar to use) or the baking times/oven
heat.
The recipe as it stands is as follows
1kg Flour (which sort should we use???)
20 gm yeast
20gm salt
10 gm oil
20gm lemon juice & vinegar (I assume this is a mix)
Hope you can help as I would like to cook the bread for my Aunt

What is the Egyptian Bread name?
Usually the bread flour is wheat flour.
The proportions of water is you should keep adding water to the flour until
it becomes a dough.
Assume 10gm lemon juice and 10gm white vinegar. If white vinegar is not
available, then, use red vinegar.
The baking time is a few minutes. Keep watching the bread until it is cooked
then take it out.
I think oven heat is 350 degree.

The juice is what you drink. Boil the flowers to get the concentrated red juice.
Add water and sugar to the concentrated red juice to drink it. You can reboil the
flowers several times to get more red juice. Repeat until no more juice
comes from the flower. Then throw the flower away.

The flour is a mix of wheat flour and the wheat flour skin.
It is the same as the "Aash Balady"
except it is baked longer, until it become "Crisp Egyptian

I just came back from Egypt trip.
I asked there about the divider. I personally went inside a
bakery and saw the manual kasseri.
I could not read anything on it. They just repainted it.
They told me the Kasseri is for Ash Fino not for Aesh Baldi.
It is called (Kasseri Ll-aash) for (Aash Fino) only. They
put 2 or more Kilo grams of dough and the Kasseri divide
it to 36 Lokma (small dough). There are 2 types of Kasseri:
Electric and manual.
You can buy it from Cairo, Madint Nasr, in a store at the
beginning of Makram Abed Street. I do not know its name.

A holiday recipes and food associated with the Ramadan Holly month holiday
in Egypt:
2) Basboussa (Called Cream of Wheat Cake, also called, Coconut and Semolina
Cake) - It is very easy to make. I recommend it for a student school
project.
The recipe of sweet dish called Baseema is the same as the Basboussa recipe
except you add a lot of coconut.
3) "Konafah" - (To serve 7 people) cooked in the oven. It is my favorite
Egyptian sweet. Try it.
4) "Atayif (Katayf)" - Be-El Mukassarat (Atayif with Mixed Nuts or Sweet
white sauce).

I think you meant baseema not baseera.
2) Basboussa (Called Cream of Wheat Cake, also called, Coconut and Semolina Cake)
- It is very easy to make. I recommend it for a student school project.
The recipe of sweet dish called Baseema is the same as the
Basboussa recipe except you add a lot of coconut.

I am looking for a recipe for a slice that I have seen called The Slice of Life.
I was wondering if you have heard of it. It is basically a short pastry

Moghat: is a pre-packaged spice drink, sold in a dark powder form in most
Egyptian spice shops, some Egyptian supermarkets, international grocery
stores, middle eastern grocery stores and Indian grocery stores. The same
recipe as Shlab but it is dark powder and it is usually for pregnant women.

The Egyptians were very secure in that the Nile valley always yielded enough
to feed the country, even when famine was present in other nearby parts of
the world.
The Egyptian's basic food and drink, bread and beer, were made from the main
crops they grew, wheat and barely. There were many types of bread, including
pastries and cakes.
Since there was no sugar, honey was used as a sweetener by the rich, and
poor people used dates and fruit juices.
Egyptians liked strong-tasting vegetables such as garlic and onions. They
thought these were good for the health.
They also ate peas and beans, lettuce, cucumbers, and leeks.
Vegetables were often served with an oil and vinegar dressing.
Figs, dates, pomegranates and grapes were the only fruits that could be
grown in the hot climate. The rich could afford to make wine from their
grapes.
Ordinary people ate fish and poultry. On special occasions they ate sheep,
goat, or pig; but there was little grazing land available so meat was
expensive and most people ate it only on festive occasions.
Egyptians stored their food in jars and granaries. Fish and meat had to be
especially prepared for storage. One method was salting. Another was to hang
up the fish in the sun, which baked them dry.
In ordinary families the cooking was done by the housewife, but larger
households employed servants to work in the kitchen and a chef - usually a
man - to do the cooking.
The Egyptians had ovens, and knew how to boil roast, and fry food.
There were few kitchen tools: pestles, mortars, and sieves.
