One things for certain.....when you think Chaozhou, you need to think HOT POT!!
Start with a wonderful broth and bring it to a boil in your hot pot. For chicken, use a great chicken stock and add lots of yummy vegetables (onion, carrots, celery) for flavoring. Bring to a boil. Slice your chicken as thin as possible (slice while slightly frozen for the thinnest slices). Add the chicken to the hotpot in a slotted spoon and cook just until done. Dip in your favorite sauce. Add lots of green vegetables and sliced potatoes to the stock to eat, also. Cabbage, carrots, and anything else you wish to try can be added, also.

Try hot pot with beef and pork.....add hot peppers to the broth for spicier palates.

And don't forget to try snake hot pot! Yum, yum, yum!
