Baked Potato Puffs
Yield: 1 1/2 dozen
4 cups - Cooked mashed potatoes
1/4 cup - Butter or margarine, melted
2 - Egg yolks
1/2 tsp - Salt
1/8 tsp - Dry mustard
1/4 tsp - Pepper
1 - Egg, beaten
Combine potatoes, butter or margarine, egg yolks, salt, dry mustard and pepper.
Beat on medium speed of an electric mixer until smooth.
Shape mixture into 2 inch balls.
Flatten balls to 1/2-inch thickness and place on a lightly greased baking sheet.
Brush surface of each potato ball with egg.
Bake at 400 degrees for 12 minutes or until browned.
