German Mashed Potatoes



Yields 10 to 12 servings

3 lbs - Potatoes, (12 medium)
1/4 cup - Butter, room temperature
Salt & pepper
16 oz - Sauerkraut
1 Lb - German sausage


Prepare potatoes for mashing as usual.

Add salt, pepper and butter to taste.
Drain sauerkraut and mix into mashed potatoes.

Place in greased 9 x 13-inch casserole dish.
Top with slices of link German sausage.
Bake at 350 degrees until sausage becomes juicy.

Cook potatoes until tender, peel when cool enough to handle.

Add salt, butter, egg, vanilla, cinnamon, sugar and orange juice to a large mixing bowl.
Add potatoes and whip potatoes until smooth, adding more juice if necessary.
Spread into greased 9 x 13-inch dish.

Combine butter or margarine, flour, brown sugar and pecans.
Spread over potato mixture.

Bake uncovered at 350 degrees for 30 minutes.
