Kugelis (Grated Potato Pudding)
5 lbs - Red potatoes
1 large - Onion
1/2 lb - Bacon, diced
6 - Eggs, well beaten
1 can - Evaporated milk (13 oz)
Salt and pepper, to taste
Sour cream
Grate potatoes and onion.
Fry diced bacon until almost crisp.
Pour bacon and fat (ouch!) over potato-onion mixture.
Beat eggs; add to potatoes.
Add milk, salt and pepper; stir well.
Pour into well greased baking dish.
Depth of potato mixture should be no less than 21/2 inches in pan.
Bake at 350 degrees for 11/2 hours or until crispy brown.
Check center to see if done.
Remove from oven, cover and let stand for 15 to 30 minutes.
Cut into squares.
Serve with sour cream.
