DOVE BREASTS.


12 Dove Breast

Garlic powder

Paprika

White pepper

Vegetable oil

Soak dove breasts in lightly-salted water for 1 hour. Remove and dry breasts. In a bag add garlic powder, paprika and white pepper. Add breasts and shake until covered. Fry dove in covered skillet coated with oil over medium heat for 20 minutes; uncover and fry 10 more minutes. Make sure the dove are cooked through, but not overcooked.

10-15 breasts

1 diced medium onion

1 can cream of mushroom soup

1/4 to 1/2 cup sherry (optional)

Pinch of oregano

Pinch of crushed rosemary

Salt and pepper to taste

1/2 pint sour cream

Place breasts meaty side down in baking dish. Do not over-crowd. Sauté onions in small amount of fat in skillet. Mix onion, sherry, herbs, salt, and pepper. Pour over bird breasts. Cover baking dish lightly with foil. Bake in 325 degree F. oven for 1 hour, turning occasionally. Add sour cream. Stir, bake about 20 minutes longer
