Apricot-Glazed
Pork Roast
3 lb lean pork,
boneless, tenderloin
1 heaping teaspoon
minced garlic
1 TBS soy sauce
1/4 cup of ketchup
1/4 cup of lemon
juice
1 tsp. black pepper
4 TBS sugar free
apricot jam
Place pork roast in
crock pot. Combine garlic, soy sauce, ketchup, lemon juice and
pepper. Pour over pork roast. Cook on low 6-7 hours. About 30
minutes before serving, coat the top of the roast in apricot jam so that the
entire surface is coated with a thick layer. The jam will heat up and
drip into the sauce while flavoring the meat.
