Big, Bad Breakfast Cookie

1 cup all purpose flour

1 cup whole wheat pastry flour

1 1/2 cups old fashioned rolled oats

1 cup Splenda Granular

3 Tbsp brown sugar

1 1/2 tsp baking soda

1 tsp baking powder

1 1/2 tsp cinnamon

1/4 cup chopped dried apricots

1/4 cup chopped pecans

1 (2 1/2 oz) jar baby food prunes (or 1/4 cup prune puree)

3 Tbsp canola oil

3 Tbsp water

3 large egg whites

1 Tbsp molasses

2 tsp vanilla

 

Preheat oven to 350.  Lightly spray cookie sheet with nonstick cooking

spray.  In a large bowl, mix together first 10 ingredients and set

aside. In a medium bowl whisk together remaining 6 ingredients.  Mix

both bowls of ingredients together with a spoon to form a stiff dough. 

Scoop 1/4 cup (using a measuring cup or small ice cream scoop that is

sprayed with pam each time) of dough for each cookie onto cookie sheet

and pat flat for form 3 1/2"-4" circle.  Bake 12-15 minutes or until bottoms of cookies are dry.

Remove from pan and place on wire rack to cool.

Makes 13 large cookies @ 3 points each
