Lentil Soup

3 cups raw lentils (rinsed)

7 cups water or stock

2 tsp salt

steam or saute' the following ingredients and add to lentils when they've softened:

2 tsp minced garlic

1 cup chopped onion

1 cup minced celery

1 cup chopped carrots

Add to soup about 30 minutes before serving:

lots of black pepper

1 1/2 cup chopped fresh tomatoes

2 TBS dry red wine

2 TBS lemon juice

1 1/2 TBS brown sugar

1 TBS wine vinegar

 

Makes 6 servings @ 6 POINTS or entire recipe is CORE + 2 points
