Mexican Lasagna

12 oz cooked ground turkey

2 cans diced tomatoes

2 cans tomato sauce

1 can chopped green chilies

1 pkg. taco seasoning

1 ½ cups low-fat ricotta cheese

1 tsp. dried cilantro

4 egg whites

8 corn tortillas (cut in quarters)

6 oz. shredded jack or cheddar cheese (Fat Free if Core)

 

Brown turkey until done, crumbling while cooking. Combine with tomatoes, sauce, chilies and taco seasoning. Bring to a boil; reduce to simmer and simmer for 15-minutes.

 

Whip egg whites slightly and add ricotta cheese and cilantro; blend well. Spray 9x13 glass dish with Pam. Layer ½ of meat sauce, ½ ricotta cheese/egg mixture, ½ tortillas and ½ cheese. Repeat.

 

Bake @ 350 for 30-minutes. Let stand for 10-minutes.
