Mimi Corn Chowder

4 cups fat free half and half

4 Tbsp light butter

6 Tbsp onion

3/4 cup celery

1 1/2 cup water

3 cup frozen corn kernels

2 Tbsp Splenda sugar for baking

2 tsp salt

1/4 tsp white pepper

3 Tbsp flour

2 cups potatoes-cubed

 

Sauté onion and celery in butter 5 minutes.  Add water, corn, potatoes and seasonings.  Cover and simmer 30 minutes until potatoes are barely tender.  Whisk flour into 1 cup half and half.  Add 3 other cups of half and half.  Simmer 15 minutes until done.

 

Makes 10 servings @ 3 POINTS or CORE + 2 POINTS
