Pork Chops with Sauteed Apples and
Sauerkraut

(1/4 pound) boneless center cut pork chops, trimmed of visible fat
1/2
t. salt
1/4
t. pepper
2
teaspoons safflower oil
3
golden delicious apples, peeled, cored, sliced
1/4
t. cinnamon

C. sauerkraut (rinsed and drained)
Sprinkle
pork chops with 1/4 t. of salt and 1/4 t. of pepper. Heat 1 t. of oil in
a large non stick skillet over medium high heat. Add pork chops cook
until brown, about 4 minutes per side. Transfer to a plate and keep warm
Heat
remaining oil in skillet, add apples and cinnamon, cook stirring occasionally,
until apples brown. Add sauerkraut, remaining salt and pepper. Cook
until sauerkraut begins to brown.
