Pumpkin Chili Mexicana

cooking spray

1/2 cup chopped onion

1 large cup chopped red bell pepper

1 clove garlic, finely chopped

1 lb extra lean ground beef

2 (14 1/2 oz) cans diced tomatoes, undrained

1 (15 oz) can solid packed pumpkin

1 (15 oz) can tomato sauce

1 (15 oz) can kidney beans, drained

1 (4oz) can diced green chilies

1/2 cup corn

1 TBS chili powder

1 tsp ground cumin

1 tsp salt

1 tsp black pepper

 

Heat cooking spray in large sauce pan over medium high heat.  Add onion, bell pepper and garlic; cook, stirring frequently 5-7 minutes or until tender.  Add ground beef and cook until browned, drain.  Add the rest of the ingredients.  Bring to a boil.  Reduce heat to low; cover and cook, stirring occasionally for 30 minutes. 

(Can also be simmered in the crock pot on low 5-7 hours)

 

Makes 8 servings @ 2 POINTS or all CORE
