Sesame Spinach

1 tsp. sesame seeds

1/8 tsp. salt

1, 12 oz package baby spinach

2 Tbsp reduced sodium soy sauce

1 Tbsp rice wine

 

Place the sesame seeds in a small dry skillet over medium heat.  Cook, shaking the pan and stirring constantly, until golden and fragrant about 3 minutes.  Add the salt and cook, stirring constantly about 30 seconds.  Transfer to a small bowl and let cool.  Cut a small slice off the top of the bag of spinach and put the whole bag on a microwave dish.  Microwave according to package directions or two minutes on high.  Remove from oven, and cut open the top, being careful of the steam.  Place on a cutting board and coarsely chop the spinach.  Combine the soy sauce and rice wine in a medium bowl.  Add the spinach and mix well.  Sprinkle with the sesame-seed mixture.
