Slow-Cooker Meatloaf

 

1 ½ lbs. lean ground turkey, skinless

1 onion, chopped

1 green bell pepper, seeded and chopped

1 egg white

¾ cup ketchup

½ cup seasoned dry bread crumbs

1 tbsp. mustard

¼ tsp. each salt and pepper

 

Cover a wire rack small enough to fit in the slow cooker with foil; spray the foil with nonstick spray. (Or fold a long strip of foil long enough to go down both sides and bottom of crock-pot, extending over sides, to be used as a handle to lift loaf out of pan). Combine all ingredients except ½ cup ketchup, in large bowl; mix well. Transfer the turkey mixture to rack and shape into loaf.

 

Place meatloaf in slow-cooker. Spread the top of loaf with the remaining ketchup. Cover and cook until the meatloaf reaches 165, 3-4 hours on high or 6-8 hours on low. Transfer to a cutting board; cut into 6 slices.
