Tuna Salad Pita

1/4 cup chopped red onion

3 Tbsp cider vinegar

6 Tbsp Fat free Mayonnaise

1 Tbsp lemon juice

Pepper to taste

12 oz tuna, packed in water

6 oz shredded 2% milk cheddar cheese (fat free if Core)

1/2 cup diced celery

15 oz black beans, drained

6 pita pockets (1 point each ideally)

 

Combine onion and vinegar and let stand 5 minutes.  Mix mayonnaise, lemon juice and pepper- crumble tuna, add celery, black beans and shredded cheese.  Add onion and vinegar mixture and toss.  Divide into 6 pita pockets.

 

4 Points per serving without the pita, add points for pita accordingly OR Core + points for the pita
