Turkey Meatloaf Burgers

1 large onion

3 cloves garlic

2 pkgs (20 oz each) 99% fat free ground turkey, no skin (Jennie O)

1 1/2 cups finely grated carrots

3 TBLS tomato paste

2 TBLS Dijon mustard

1/2 tsp kosher salt

1/4 tsp ground black pepper

2 TBLS olive oil (opt) if cooked on stove top

 

Place onion and garlic in food processor and run until finely chopped but not liquefied.  In a large bowl, combine the turkey with the onion mixture, carrots, tomato paste, mustard, salt and pepper.  Form into 10 equal patties about 4-5 oz each.  I cook on a George Foreman grill, but can be grilled on stove top with opt olive oil.  Individually wrap and store in freezer until needed.
