“Protested By PETA” Chili

The politically-incorrect name for this recipe is derived from the fact that it contains 5 different types of meat, treated in different ways. Vegetable matter is limited to a small portion of the total.
Vegetables:
Diced tomatoes, 2 cans (I use the ones with jalapenos)
1 large or 2 small onions, about 1 cup chopped
8 oz mushrooms
Olive Oil (for browning)
2 Tbl Masa Flour
Spices:
Cumin 3 Tbl Paprika 1 Tbl
Oregano 1 Tbl Garlic Powder 2 Tbl
Salt 1½ tsp Cinnamon ½ tsp
Pepper: Varies to taste. This can run from up to a tablespoon of something like Cayenne, down to ½ tsp of my homegrown HazMat peppers. For company and cookoffs, I generally go for a 5-6 on a 10-scale of hotness. For home consumption, it's 7-8.
Meats:
1 ½ lb London Broil, marinated (oil, vinegar, Soy, Worcestershire, lemon juice, mustard, pepper)
1 pkg (20 oz) ground Turkey, seasoned with Soy Sauce and Jerk Seasoning
5 links (about 1 lb) hot Italian Sausage
1 lb ground Bison, seasoned with Barbecue Sauce
1 lb ground Lamb, seasoned with Yogurt and Garam Masala
Process:
Set crock pot to High. Put in the Tomatoes. Chop the Onions to medium-fine in a food processor, and saute in a pan on medium-high heat until caramelized. Add to Crockpot. Chop the mushrooms likewise, and saute over high heat with a bit of salt. Into the pot with them.
Grind the Spices. Add them to the pot, with a bit of water to rinse out the blender jar.
Form the ground meats into patties. Brown all the meats, preferably by grilling. Cut each portion up into bite-size pieces and add to the pot. If the contents look a bit dry, add a cup or so of water.
Simmer at least an hour, preferably longer. Two or three is better. Half an hour before serving, pull off a cup of liquid. Stir in the Masa Flour, making a thickener. Add back to the pot, and stir it in.
