Absolutely Amazing BBQ Beef Back Ribs

 

Need:
Two whole slabs of Beef Back Ribs
Two 2 Liter bottles of Mountain Dew
1 large Onion
4 cloves of Garlic
BBQ Sauce
Seasoning to taste
 
Do:
Cut Beef Back Ribs into sections of 2 and/or 3 ribs. 
Put the pieces into a large stock pot
Fill the pot with Mountain Dew, completely covering the meat and put a lid on it. 
(make sure there's room at the top of the pot for bubbling, if not, use two pots)
 
Let the ribs marinate for about 45 minutes before turning on the heat.
(Normally when simmering meat one would bring water to a boil before adding the meat, but I believe the citric acid and carbonation in the Dew also act as tenderizers) 
 
Then turn heat to High and add:
1 whole Onion cut into quarters
4 cloves of Garlic coarsely chopped
 
Bring the pot to a boil, then turn down the heat and simmer 1 full hour
(It takes quite a while before it starts to boil, but watch it closely because the pot can foam up and spill over -a sticky mess)
 
Start the grill before the simmering is done
 
Remove pot from heat and take the ribs out with tongs
(if the BBQ isn't ready yet, leave the ribs in the Dew)
 
Put ribs on grill to brown (bone side down first)
Season to taste (recommend just Kosher Salt and Pepper)
Brown with Bull's Eye BBQ Sauce (or favorite) twice coated on each side. 
 
Cut between remaining ribs before serving
(They were originally left in sections of 2 or 3 ribs because the meat will shrink less during cooking)
 
Recent addition:  Garnish plate with a few sprigs of Cilantro!  Mmmmmm!
