| Heat the
special æbleskive pan to medium. Beat egg whites until fluffy and in a
separate bowl beat the yolks with sugar, ad buttermilk. Combine flour, salt,
baking powder and baking soda and slowly add to buttermilk mixture. Fold in the
beaten egg whites. Put a little Crisco in each hole in the frying pan and fill holes 3/4 full with the batter. Using a granny fork or knitting needles carefully turn the balls to make them round as soon as the edges start to dry and turn brown. Fry until done. Serve hot with strawberry or other jam. A dusting of powdered sugar is optional. More recipes will follow
