Beth's Beer Biscuits

 

4 C. Bisquick

2 T. Sugar

2 C Beer (room temperature)

 

Preheat oven to 450º. Grease muffin tin and fill each 1/3 full with batter. Let rise a few minutes. Bake until golden brown.

 

Swedish Ostkaka - The Old Version

Three gallons sweet milk

One cake rennet - dissolved in tepid water.

Mix the rennet into 2 cups flour - thinned to a paste with cold milk.

 

Heat milk on stove until lukewarm and stir in the above mixture. Let stand until curdled, drain away whey. Stir together 4 beaten eggs, 2 cups sweet cream, 1 cup sugar -- add to curds and bake 1 1/2 hours.  (I'm sure that this recipe must have used 1 tsp vanilla - I'd maybe use almond)

 

Since we can't get the raw milk - there are several mock Ostkaka recipes. Connie Swanson Ryan has two of the best. She is Carl Swanson's youngest daughter.

 

Connie's Ostkaka

 

4 eggs, well beaten

1/2 Cup sugar

1/2 tsp. salt

1 Tbsp. flour

Beat the above ingredients until light and fluffy. Add:

1/2 Cup half & half

1 1/2 Cups milk

 

Stir and add:

1 small carton cream style cottage cheese

 

Stir until it is evenly distributed.  Bake @ 350 for 1 hour, or until knife comes out clean.  Serve with thickened Lingonberry, or  Blueberry sauce, and topped with whipped cream.

 

 

Beth's 'Back-of-the-Pay-Envelope' Ground Beef Casserole

 

1 ½ Pounds ground beef

3 Small cans tomato sauce

1 Onion

Garlic powder

Oregano

Season Salt (Assuming Lowery's here...)

Parsley flakes

Pepper and Salt to taste

 

Brown beef and drain. Add seasonings and simmer 45 minutes.

 

Preheat oven to 350º. Boil noodles and begin to assemble casserole by layering some of the meat in the bottom of your casserole dish. Layer thus:

 

Meat

Noodles

Mozzarella cheese

Cheddar cheese

Lipton's French Onion Soup (dry)

Repeat until you run out of ingredients.

 

Bake approximately 35-45 minutes, or until hot and bubbling.

 

Donna's Easy Chicken Pot Pie

 

1 2/3 C Frozen mixed vegetables, thawed

1 C Cut up, cooked chicken

1 can condensed Cream of Chicken or Cream of Mushroom Soup

 

 Preheat oven to 400º. Mix vegetables, chicken and soup in un-greased 9" pie plate. Top with either canned biscuits or a mixture of:

 

1 C Bisquick

1 Egg

½ C milk

 

Mix and spread on top of vegetable/meat mixture.

 

Bake for 30 minutes or until golden brown and bubbling.
