Jenny's Hot Chocolate Mix

 

From my new next-door neighbor - Lee Wheeler - I like this stuff so well, I can eat it with a spoon! I bet it would be good on ice cream... it's sure good in milk!

 

1 Can Eagle Brand Milk (the Wal-Mart substitute for Eagle Brand is just as good and about half as expensive!)

 

¾ C chocolate chips

 

Melt chocolate chips with milk in top of double boiler or in microwave.

 

Add: 1 tsp Vanilla  - Let cool COMPLETELY.

 

In a chilled bowl, beat: 1 C Heavy Whipping Cream until the cream develops 'body' -  soft peaks. In other words, don't get stiff peaks or turn it into butter.

 

Mix that with the cooled chocolate mixture and put in canning jars. This recipe will fill about four and a half jars. Keep in refrigerator - if it lasts that long to have some to store.

 

For hot chocolate, fill a heavy pan with whole milk, add a heaping tablespoon per cup, or more!, of the mixture and heat . Put in mugs with miniature marshmallows and prepare for chocolate heaven.

 

This makes a great 'hostess' gift - or a wonderful bribe for aunts and grandmothers!

Jenny's Neighbor's (That's Lee!) Spiced Tea Mix

 

2 C Tang

1 C Instant Tea

2 C Sugar

3 C Lemonade

½ tsp cinnamon

½ tsp cloves

1 package Red Hots

 

Put all in a bowl that can be covered with a tight lid and mix well. You can play with the proportions - if you like a more 'tea-like' flavor, cut down on the Lemonade and add more tea. Or add less Tang and more tea. It's a versatile recipe.

 

Genevieve's Chocolate Bread Pudding

 

2 cups milk                                  

1/8 teaspoon salt

2 eggs                                          

1 cup bread crumbs

2 tablespoons melted butter        

1 teaspoon vanilla

½ to 2/3 cup of sugar                  

1 square (1 oz.) Chocolate or 3 tsp. cocoa

 

Beat egg yolks with butter and sugar; add crumbs, salt and chocolate.  Beat about 1 minute with slow beater; fold in vanilla into egg whites beaten stiff.  Bake in moderate 325 degrees until firm.  Serve with shipped cream, or caramel sauce.

 

Genevieve's Brown Betty

 

1 lb. apples (3 apples sliced) 

¼ cup brown sugar

1 ¼ cup dried bread cubes    

¼ teaspoon grated nutmeg

¼ cup butter melted            

Grated rind &  juice of ½ lemon

 

Method: Stir butter into cubes of bread cover bottom of buttered baking dish with bread , spread over it half of the apple, ½ sugar, ½ lemon rind and ½  nutmeg,  repeat layers and end with light layer of bread cubes.  Bake 30 to 40 minutes at 325 degrees.  Serve with thin syrup sauce.
