1 pound ground beef
1 onion
1/2 pound ground pork
2 tbsp butter
1/2 cup rice
salt & pepper to taste
1 egg
5 slices bacon
Remove core from head of cabbage. Scald the
cabbage in boiling water. Remove a few leaves at a time as they
wilt. Cool Before using. Cook rice for mix.
Sauté onion in butter until it becomes
transparent. Combine with meat, egg, rice and seasoning and mix
well. Spread mix on a cabbage leaf about a half inch thick, fold the two
sides over and roll starting with 1 open end. Fasten with toothpicks if
necessary.
To cook, place cabbage rolls in baking dish.
Cover with 5 slices of bacon and roast for 2 hours @ 300 degrees
uncovered. Baste from time to time. Serve with mushroom sauce,
tomato sauce or sour cream. Serve with your favorite pasta or mashed
potatoes.

Beans (White or Brown)
1 lb Beans (Great Northern, Pinto, Navy, Whatever)
Pick through beans and remove rocks, dirt, etc.
Wash three times by putting in pot, covering beans with water, swishing them
around and pouring off the water while it's still swirling. When clean, cover
with water and "cook hell out of 'em*" for one hour. Reduce heat and
simmer slow for two more hours, adding water as necessary to make soup. Season
with ˝ C or so of bacon drippings, salt and pepper to taste.

Donna remembers this recipe from her childhood
because she was so impressed by the magical appearance of gravy as it cooked.
1 ˝ lbs Ground Beef
2 Eggs
˝ C Onion, chopped
Garlic to taste
Salt and Pepper to taste
Flour for dredging
Oil or Bacon Drippings for frying
Water to cover
Mix first five ingredients together. Make into
patties, dredge in flour coating both sides and brown both sides in skillet
large enough to accommodate patties and gravy. Sprinkle a little additional
flour on the patties as they brown.
When patties are nicely browned, add hot water to
cover. Put tight-fitting lid on skillet and simmer until gravy thickens.
Donna adds, "I have also sliced onions and
browned them with the patties before adding flour and water to simmer."
Jenny adds, "A can of mushrooms couldn't
hurt!"
Donna's
Fried Rice
1 ˝ C Ham, chopped
˝ C green Onion, chopped
Sauté ham and onion in bacon grease. Set aside.
Scramble five eggs in skillet. Set aside.
Cook 2 cups long-grain white Rice as directed on
package.
Mix all ingredients together and top with more
chopped green onions. Serve with Soy Sauce.
