Jenny's Favorite Blackberry Wine Cake

 

Ingredients:

 

1 Box Duncan Hines White Cake Mix

4 eggs

1/2 cup oil

1 cup Manischewitz blackberry wine

1 box Royal Blackberry Gelatin Dessert

   (Jell-O no longer makes a Blackberry flavor.)

½ C Chopped Pecans

 

For Glaze:

1 C Powdered Sugar

½ C Butter, softened

1/2 cup blackberry wine

 

 

Directions:

 

Preheat oven to 325º. Grease and heavily flour a standard Bundt pan. Set aside.

 

Mix cake mix with Royal Gelatin. Add eggs, oil and wine; mix well. Sprinkle nuts in bottom of Bundt pan. Pour in batter carefully so as not to disturb nuts.

 

Bake for 40-45 minutes or until toothpick comes out clean.

 

When cake is done, mix powdered sugar, butter, and 1/2 cup blackberry wine and bring to a boil.

 

Pour 1/2 of glaze mixture over hot cake as soon as it comes out of the oven. Leave in pan 30 minutes. Take out and pour remainder of glaze over cake.

Jenny's Golden Rum Cake

 

Not for those underage fans of Jenny's cooking...

 

Cake:

 

1 cup chopped, toasted pecans or walnuts
1 18-1/2 ounce yellow cake mix
1 3-3/4 ounce instant vanilla pudding mix
4 eggs
1/2 cup cold milk
1/2 cup vegetable oil
1/2 cup Barcardi dark rum

 

Glaze:

1 stick butter
1/4 cup water
1 cup sugar
1/2 cup Barcardi dark rum

 

Cake: Preheat oven to 325º.

 

Grease and flour 12-cup Bundt pan. Sprinkle nuts on bottom of pan. Combine all cake ingredients. Beat for 2 minutes on high with electric mixer. Pour into prepared pan. Bake for 1 hour. Cool in pan. Invert on serving plate. Prick top with fork. Drizzle glaze over top of cake. Use brush or spoon to put extra dripping back on cake.

 

Glaze: Melt butter in saucepan. Stir in water and sugar. Boil 5 minutes, stirring constantly. Remove from heat and stir in rum.

Note: The rum will cause steam. Be careful not to burn yourself.

 

Notes in the Margin: The longer this cakes sits, the better the taste. It will stay moist a long time. It also freezes beautifully.
