Mable's Fresh Apple Cake and Lemon Sauce

 

This was Mom's absolute *favorite* homemade cake. It's easy... it's delicious... and it's guaranteed to stir up a lot of good memories over a cup of hot coffee or a glass of milk. I double the Lemon Sauce recipe - we like a lot of sauce. And if you've got apples that are almost past eating, they'll be perfect for this recipe - even if they're a bit soft and the peal is beginning to look a little shriveled.

 

Preheat oven to 350º. Spray 9"X13" baking dish with Pam.  Then,

for Cake, mix:

 

1 1.2 C Sugar

½ C Butter (1 Cube)

2 Eggs

1 tsp Vanilla

 

Then add:

 

11/2 C Flour

1 tsp Baking Soda

¼ tsp Salt

1 tsp Cinnamon

3 C Cubed Apples

 

Spread batter in baking dish - yes, 'spread'. This is hardly a 'batter'... it's very thick. The apples provide most of the moisture.

 

Bake for 45 minutes. Serve warm or cold with Lemon Sauce:

 

Mix:

 

¼ C Flour

1 C Sugar

 

Add:

 

2 C Boiling Water

1 tbsp Vinegar

 

Stir until thickened. Leave on heat and add:

 

¼ C Butter

2 tsp Vanilla

2 tsp Fresh Lemon Juice

 

 

                                                                                                             

 

Mable's Way-Easy Fruit Cobbler

 

Mama used to make this using peaches, mostly. Served hot out of the oven with a scoop of vanilla ice cream, it's unbelievable how good it is... and it's even better if you start with three cups fresh peaches, peeling them, slicing them and bringing them just to the boil with a couple tablespoons of sugar and a splash of sweet wine. The difference between canned and fresh is unforgettable!

 

Preheat oven to 350º. Spray a 9"X13" baking dish with Pam. Set aside.

 

Mix:

 

1 C Self-Rising Flour

(If you have All-Purpose Flour, use it and add a couple teaspoons of Baking Powder)

Dash of Salt

1 C Sugar

1 C Milk

1 #303 Can of Sliced Peaches (or other fruit) packed in syrup

Butter

Cinnamon

 

Mix the dry ingredients before adding the milk. Whisk until smooth. Pour into baking dish. Drain fruit a bit, leaving just enough juice to float on the surface of the batter; place fruit  evenly on top of batter and drizzle on some of the juice. Dot with butter. Sprinkle with Cinnamon.

 

Bake for about 45-50 minutes, or until batter puffs up and turns golden brown and delicious.
