Jenny's Broccoli Chicken
Casserole
This
is a recipe I got a long time ago from my best friend's aunt in Florida. She
was a caterer and she knew what she was doing. This is another easy recipe that
tastes like you slaved for days over it... and it's economical, too.

Chicken, boiled and boned (Add onion, celery, garlic, salt and pepper to enough
water to cover chicken and you can freeze the broth for use in soups, sauces
and gravy!)

Boxes Frozen Broccoli - the good stuff. Not just chunks of stems with a few
florets. Cook according to package directions and set aside.
While
the chicken is boiling, butter or spray with Pam a 9"X13" glass
baking dish and set aside.
For
sauce:

Can Cream of Mushroom Soup
½
Stick Butter
1 8
oz Carton Sour Cream
½
Soup Can Milk
1
Small Can Mushrooms, Pieces and Stems
Salt
and Pepper to taste
Combine
these ingredients and warm in saucepan.
Preheat
oven to 350º. Layer chicken on bottom of
dish. Cover with sauce mixture. Arrange broccoli on top. Dot with more butter.
Bake until casserole is hot and bubbling... length of time will depend on
temperature of ingredients at assembly. All you need is a salad and some hot
bread with this one... maybe just some hot bread!

one you don't know about. I don't know
why this is good, it just is. I serve it
with garlic mashed potatoes that I make by simply putting a little garlic
powder in the water that I boil the potatoes in and then when I mash the
potatoes, I use garlic salt and a little sour cream as well as milk and
margarine."

½ -3 lbs Round Steak (or sirloin-not real thin slices-get a thick slice)

tbsp Dry Mustard
1 to 1 1/2 tsp salt

½ Cup Onions, sliced thin
½ Cup Flour
3
tbsp Oil
2
tbsp Worcestershire sauce
1-2
tbsp Brown Sugar

Cups (large can) canned Tomatoes
Cut
meat into serving-sized pieces. Mix mustard, salt and flour. Dredge steak in this mixture. Brown well in
oil. Put in 13"X9" pan and
sprinkle meat with onions (I separate the slices into individual rings),
Worcestershire sauce, brown sugar and tomatoes (I take the tomatoes and squish
them up a bit). Cover and bake at 325º
for 1 1/2 to 2 hrs. (Last 20 min. I
throw in some frozen peas - or canned drained, just to give it a look that Jim
remembers from his youth).

cup flour
Mix,
stir well. Fry sausage patties, arrange in 9 x 13 pan. I use 8 to10
patties, pour mixture over these and
bake about 400F for 20 minutes. Cut into squares. Leona's note: This was my
mother's recipe. In the old days, if they had an ice box or it was cold
outside, the patties would stick to the
bottom of the pan and then came to the top when the mixture got hot. Maybe they
oiled the pan I don't know. This was a good recipe for a meal on washday when
