Mable's Salmon Patties and Tartar Sauce

Mable taught both Donna and me to cook. You'd think we'd do the same dishes the same way, wouldn't you? Not us. We think Mom played with the recipes before I came along... so here's the Jenny Version. The Donna Version of Salmon Patties and Tartar Sauce can be found elsewhere in the cookbook.

 

1 C Pink Salmon, de-boned and de-skinned, please!

1 Egg

Blob of mustard, about the size of a pecan

Cracker or bread crumbs

Salt and Pepper

Corn meal to coat patties

 

Even though they say those bones are edible, don't you believe it. They're nasty! Pick 'em out along with the ucky bits of skin and toss 'em.

 

Break up the salmon and add the mustard, salt, pepper, and egg. Mush up with your hand - it's going to get dirty anyway. Add enough bread or cracker crumbs to give you a mixture that will stick together and make a patty. One can of salmon will make four medium size patties; divide mixture in four equal parts and form patties. Coat in corn meal and fry in hot skillet with just enough oil to cover the bottom about 1/8" or less. The patties will soak up some of the oil. These don't take long - they're done when the cornmeal is golden brown.

 

Tartar Sauce:

 

½ Medium Onion, chopped

1 Large Kosher Dill Pickle, chopped

¾ C Mayonnaise (No Miracle Whip here, thanks!)

1 tbsp Mustard

½ tsp Celery Seed

½ tsp Worcestershire Sauce

Dash of Louisiana Hot Sauce, or to taste if you like it spicy

 

Stir together and serve with salmon patties.

 

Donna's Meatloaf and Glaze

 

1 ½ lb Ground Beef

2 Eggs

1 tsp Salt

¾ C Cracker Crumbs

½ C Onion, chopped

1 small can Tomato Sauce

1 tsp Garlic, Minced

 

Preheat oven to 350º.

 

Mix all ingredients and make into two equal loaves. Bake for approximately 45 minutes and drain off grease.

 

Glaze:

 

1 C Ketchup

½ C Brown Sugar

 

Mix and spread on meat loaf. Bake 15 more minutes, until glaze is hot and bubbling.

 

Donna's Frosted Meatloaf

 

Bake your favorite meatloaf.

 

Peel and cook the same amount of potatoes you'd make if you were serving mashed potatoes on the side with your meatloaf. Mash, add your milk, butter, salt and pepper to taste, and mix in some grated cheese to make mashed potatoes.

 

Frost your meatloaf with your mashed potatoes, just like you were frosting a cake. Sprinkle grated cheese on top and bake until cheese is melted.
