Lori's Monkey Bread/King Cake

Lori Robbins sends this recipe along for what her mom calls 'the best Mardi Gras King Cake'... sounds like pretty good stuff no matter when you make it.

 

1 stick butter or margarine
1/2 cup brown sugar
1/2 cup granulated sugar
2 teaspoons cinnamon
3 packages (7.5 oz) Buttermilk biscuit dough.

Instructions:


1.      Mix cinnamon and granulated sugar together--a resealable plastic bag is ideal for this, and makes the preparation chores especially fun for kids.

2.      Cut each roll of biscuit dough into quarters or halves, depending on your preference. Roll into balls and shake them in the bag with cinnamon and sugar mixture until they are nicely coated.  Then toss them into a greased tube pan, or arrange them in an "O" shape in any circular cake pan.

3.        Melt the stick of butter and add brown sugar. Stir the brown sugar into the butter until dissolved. Pour the mixture over the biscuit pieces in the tube pan. Bake at 350º for 30 min.

When Mardi Gras rolls around, you can use this recipe to imitate the traditional Mardi Gras King Cake. Make the recipe above (you might want to sprinkle a little lemon juice into the coating for true authenticity). Use food coloring to dye sugar purple, green, and yellow, then sprinkle each color on alternating sections of the cake. If you can find a tiny plastic baby doll at your local craft store, make a subtle cut in the finished cake and hide it inside. Whoever gets the piece of cake with the baby is "King" for the day (and down in New Orleans, has to supply the rest of the group with a treat)! Serves: 6

Donna's Red Lobster Cheese Biscuits

 

I included this recipe not because Donna provided it but because these biscuits are one of Donna's favorites - they're great with chef salad for an easy - but not necessarily low-cal/low fat meal.

 

Dough:

 

1 1/4 lbs. Bisquik

3 Oz. freshly shredded cheddar cheese

11 Oz. cold water

 

Garlic Spread:

 

1/2 cup melted butter

1 tsp garlic powder

1/4 tsp salt

1/8 tsp onion powder

1/8 tsp dried parsley

 

To cold water, add BisQuik and cheese, blending in a mixing bowl. Mix until dough is firm.

 

Using a small scoop, place the dough on a baking pan lined with

baking paper. Bake in 375 degree oven for 10 to 12 minutes or until golden brown. While biscuits bake, combine spread ingredients. Brush baked biscuits with the garlic topping.

 

Dad Dahl's Swedish Pancakes (Thanks, Marilee!)

 

2 cups milk

1 cup flour  

4 eggs  

2 Tbsp Butter

1 Tbsp Sugar  

1 Tsp Salt 

1 Tsp Orange peel  

1 Tsp Nutmeg   

 

Mix in a blender and cook in melted butter using a skillet or pancake pan with a small lip.  This is a large, thin pancake 8-10 inches in diameter. After browning on both sides, put tart jelly or syrup in middle and roll up. Serve immediately.
