Edna's Cookies

 

This receipt  we got in September 1936 in Merna, Nebraska, from a dear friend Abby Nelson. It is always good.

 

1 C Brown Sugar

1 C White Sugar

½ C Butter or Lard

3 Eggs

 

Add:

 

3 C Flour

1 Tsp Soda

1 Tsp Baking Powder

1 Tsp Cinnamon

1 Tsp Nutmeg

1 ½ C Chopped Raisins

1 C Nuts

 

Add 1 cup cold coffee last and mix well. Bake on greased cookie sheet at 350º F for ten minutes. Test and try. Adjust baking time accordingly.

Louise's Bar-B-Que Brisket

 

Beef Brisket

2 Tbsp Liquid Smoke

1 Tsp Garlic Powder

1 Tsp Onion Salt

2 Tsp Celery Seed

1 Tsp Salt

2 Tsp Worcestershire Sauce

2 Tsp Black Pepper

 

Mix all the ingredients and brush on the brisket. Wrap in aluminum foil and refrigerate overnight.. Next day, put rolled foil in pan. Bake 5 hours at 300º F. Add bar-b-que sauce and bake at least 45 minutes longer uncovered. Eat!

                                                                                                             

Clara's Icebox Cookies

 

Clara (Swanson) Dahl, Lauren's grandmother, had four boys - Carl, Clarence, Lawrence and Einar - and she raised them during hard times, crossing the ocean at least twice (on the Mauritania and the Lusitania, no less!) and living in a soddy and farming in Nebraska. She also sewed, made lace, and - of course - cooked. I have one of her handmade traveling dresses - made of good, strong fabric that looks as new today as it did back in the early, early 1900s. This is one of her recipes, sent to me by Aunt Edna Dahl, Lawrence's wife.

 

2 C Brown Sugar    1 C Butter or Lard

2 Eggs                1 Tsp Cream of Tartar

1 Tsp Soda           1 Tsp Almond Flavoring

1 Tsp Vanilla         1 C Flour (+ or -)

½ C Nuts

 

Cream brown sugar and butter together. Add eggs; mix well. Add almond, vanilla and nuts. Add flour to make a rather stiff dough.

Spoon out onto wax paper and form into a roll. Put in 'fridge. When you want to bake, slice into cookies and bake at 350º F until browned. Do not over bake.

 

Eunice's Meatballs

 

1 C Cornflakes

2 Lbs Ground Turkey

2 Tbsp onion flakes

2 Tbsp Soy Sauce

¼ Tsp Black Pepper

½ Tsp Garlic Powder

2 Eggs

¼ C Catsup

 

Topping:

12 Oz Chili Sauce

16 Oz Cranberry Sauce

2 Tbsp Sugar

2 Tsp Lemon Juice

 

Form meat mixture into balls and place in baking dish. Combine Topping ingredients and pour over meatballs. Bake at 350º F for 40 minutes.
