Eunice's Congo Bars
Here's
Evelyn Swanson James' recipe for a delicious cookie bar. She has used for a
long time and says she got it from Eunice Dahl.

2/3 Cup Flour
1/2
tsp Salt
2
1/2 tsp Baking Powder
Sift
together and set aside.

Cup Margarine
1
box Brown Sugar (2 1/2 cups)

Eggs
1
Cup Nuts
1
small pkg each: chocolate chips and butterscotch chips

1/2 tsp. Vanilla
Melt
margarine in large pan. Add Brown Sugar - cool - add vanilla. Beat in eggs one
at a time. Add flour mixture, nuts, chips, dates or whatever. Bake in 15"x10"x1" pan at 350º
for 30
minutes. Cut in 1" squares.

wife Mable Wright Collins, and then she gave it to their son, Wayne Collins'
wife, Sharon. Henning's mother was a sister of James Swanson, father of Clara
Dahl.
Green Tomato Pickle Relish
1/2
peck green tomatoes
8
small onions
1
large bunch of celery
5
cups vinegar
Mustard
seed, Celery seed and Mixed spices, 1/2 box of each
4 cups sugar
Put
mixed spiced only in a cloth and tie it closed. Put tomatoes and onions through
chopper or grinder, let stand over night in salt water. Squeeze out and let
standing in fresh water a short time and squeeze out again and scald in
water. Drain and put in large pot. Then
add vinegar, sugar, and bag of spices and boil for 20 minutes, and seal in
jars.
