Creamy Shrimp & Pasta

1 whole garlic head minced
2 Tbs. Olive oil
2 Shallots, minced
1/4 cup chicken stock
1/2 cup evaporated skim milk
1 Tbs. Cornstarch mixed with 1 Tbs water
1 pound penne pasta
1 pound raw baby shrimp
2 Tbs. Fresh cilantro leaves chopped
1/2 cup freshly grated parmesan cheese
*In saucepan heat 1 Tbs. Oil & add shallots. When it's golden brown, stir in the stock and garlic. Bring to a boil and add the evaporated milk & cornstarch mixture. Blend in blender.
*Cook pasta.
* In saute pan heat 1 Tbs olive oil and cook baby shrimp. Add the creamy garlic mixture. Season with salt & pepper & cilantro. Add parmesan cheese & mix well. Add the pasta and toss. Cook a while longer to cook down.
