Quick & Easy Spanish Rice
2 cups water
1 medium size tomato
1/4 small onion
1 clove garlic
1 cube of Caldo de Tomato by Knorr (found in the Spanish food aisle)
2 TBS oil
2 cups minute instant rice
Lightly brown the rice in oil until golden in color.
In blender, puree remaining ingredients.
Bring to a boil and simmer approx. 15 minutes
Bring to a boil once again, stir in rice and cover with a lid.
Rice should be soft after approx. 10 minutes.
