Swiss Steak

 


1 top sirloin steak (approximately 1 1/2 pounds), see note
1 teaspoon garlic powder
Salt and pepper
1/4 cup All-purpose flour, for dusting
1/3 cup vegetable oil
2 cloves garlic, crushed or 1 TBS. minced garlic from a jar
1 (14-1/2 ounce) can diced tomatoes
1 medium onion, cut into strips
1 medium bell pepper, cut into strips after seeds are removed
1 TBS. beef boullion

Cut steak into serving-size pieces.
Season, to taste, with garlic powder and salt and pepper.
Dust meat with flour.
In heavy skillet, brown both sides of meat in vegetable oil.

Transfer meat to Crock Pot.
Add onion and bell pepper to pan and lightly brown in drippings from browned meat, add to crock pot.
Combine garlic, tomatoes, 1 tomato-can measure of water and boullion.
Pour over steak and cook on low in crock pot for about 7 to 9 hours.
Season, to taste, with additional salt and pepper.

Note: To ensure tenderness, it is necessary to have the butcher run the round steak through the tenderizer one time.
