Seafood Casserole
1 stick butter
1/4 cup chopped fresh parsley
1 small onion, chopped
1/2 cup chopped green onions
3 ribs celery
2 garlic cloves, minced
1 (12-oz.) pkg. thin noodles
1 can artichoke bottoms, rinsed and coarsely chopped or 2 cans
quartered artichokes
Splash of sherry
2 (6-oz.) pkgs. baby spinach
2 (10 3/4-oz.) cans cream of shrimp soup
1 cup shredded Cheddar cheese
1 1/2 lbs. crabmeat (lump or claw)
2 lbs. crawfish tails or shrimp
1 cup shredded Parmesan cheese
1/2 cup bread crumbs (plain or Italian flavor)
1. In saucepan, melt butter and sauté fresh parsley, onion, green
onions, celery and garlic until soft.
2. Meanwhile, cook noodles, then drain.
3. To the sautéed vegetables, add artichokes, sherry, spinach, soup,
Cheddar cheese and cooked noodles.
4. Crawfish tails can be added to the casserole mixture without
further cooking, but I lightly sautéed the shrimp in a little olive
oil and butter, just until it turned pink.
5. Add shrimp to the casserole mixture and then gently fold in the
crabmeat.
6. In small bowl, mix Parmesan cheese with bread crumbs. Top
casserole with the Parmesan and bread crumb mixture.
7. Bake in preheated 350-degree oven for about 30 minutes or until
bubbly.
