Scones
Scones are the traditional tea time treat especially served with whipped
cream and strawberry jam and a pot of ceylon tea. Savoury scones are also really
nice. They are just so easy to make.
I didn' t think about sending this recipie until Shan emailed me and said how
much she'd enjoyed them when she visited London, and how she'd never had them
as nice since. Well I'm not promising anything, I had to think about
quantities because scones ar one of those things I cook without weighing or measurung.
I hope they are ok.
Scones
8oz flour
4oz butter
1 level tsp bicarb of soda
2oz sugar
1oz sultanas(optional)
milk for binding mixture
Blend bicard of soda into flour
Rub butter into flour until it forms 'breadcrumb' consitency
Add sugar and sultanas
Mix in milk gradually to form a soft and pliable dough
Roll out on a floured board to1/2 in thickness
Cut into rounds using a cookie cutter or the edge of a glass
Place on baking tray and cook at 350 F for 20 mins or until golden. (Check
after about 15 mins to be sure.)
Serve with strawberry jam and whipped cream, or just with a little butter and
a nice cup of tea!
Grated strong cheddar can be added instead of sugar and sultanans. Savoury
scones are nice flavoured with cheese, dried sage and a little paprika. These
are really nice served warm with a bowl of tomato soup
