GOT OMELET?

Cook diced onions, bell peppers (I like red, orange or yellow) and sliced mushrooms over medium-high heat in non-stick pan sprayed with cooking spray. Remove from pan.

Wilt a generous handful of spinach in pan with another shot of non-stick spray. Pour 1 c. egg substitute (mine is 2 pts., check your NI) on top, along with 1/2 cup fresh salsa, 1 oz. RF cheese (2 pts.), salt, pepper and hot sauce. Cover and cook over medium heat until puffy.

Top with sauteed veggies and serve!

I eat this with a side of sliced tomatoes with lemon-pepper seasoning.
