See's Fudge: from the "LanesEnd Recipe Exchange" (submitted by Robbie Barrios)

Ingredients:

3 12 oz. packages of chocolate chips

1/2 lb. butter

7 oz. jar of marshmallow topping

2 cups chopped nuts of your choice (optional)
       (some good choices are toasted pecans, walnuts or peanuts)

2 tsp vanilla  (note: for a richer fudge use 3 tsp)

4 1/2 cups sugar

1 12 oz. can of evaporated milk (such as Pet or Carnation)

 Tools:

Large mixing bowl.

Large pot (such as one used for boiling corn on the cob)

9x13 pan or glass bake dish buttered.
   Note: If you prefer large pieces of fudge you can use a smaller square pan.

 Preparation:
1.  In a large bowl, mix together the chocolate chips, butter, marshmallow topping, nuts, and vanilla.
2.  In a large pot, put the sugar and evaporated milk.  Bring to a boil, stirring often.
3.  As the mixture comes to a boil, continue stirring, and allow the mixture to boil for 6 minutes ONLY.
4.  Pour the boiled mixture over the first mixture (in the bowl) and stir well until smooth.
     (Tip: if you are comfortable working with the hot pot, a better technique would be to place a large towel under the pot and then pour the dry ingredients from the bowl into the pot and then carefully stir until smooth.)
5.  As soon as all of the ingredients are melted, transfer the fudge into the buttered pan and store, covered,  in the refrigerator.
6.  Cut into candy-sized pieces.
