CHICKEN GUMBO

Roux

1   large hen (cut up)

4   yellow onions (chopped)

4   ribs. celery (chopped)

2   tbsp. parsley (chopped)

flour

Coat chicken pieces in flour then brown in a small amount of oil.       

Remove & drain on paper towels.      

If needed add a little

more oil to pot with the roux &  sauté the yellow onion & celery for about 8 minutes.

Add the chicken & 1 gal. HOT WATER.      

Cook slowly until chicken is tender then. Then add the parsley & green onion.

Cook 10 minutes more .

 

NOTE ; sausage may be add at the start of cooking if desired & cut okra also the last 1/2 hour.
