CORNISH BAKED HENS

2   Cornish hens

1/3  stick of butter

1  4 oz. can mushrooms

1/3 cup dry white wine

3 tbsp. parsley (chopped)

     Tony's seasoning

 

Rub hens inside & out with Tony's, then place in refrigerator  several hours before cooking.

Melt butter in a baking pan

Turn hens over in buttered pan to coat.      

Place hens on back with legs tied.

Place a tight fitting cover of foil over pan.

Bake for 45 to 60 minutes at 325 degrees.     

Remove foil the last 15 minutes & brown at 400 degrees.

Remove hens to a warm serving dish.    

Drain mushrooms and  sauté' in drippings, adding wine.

If more liquid is needed add the mushroom juice.
To serve pour over hens & sprinkle with the chopped parsley
