CORNISH HENS

2  Cornish hens

1/3 cup butter

1/3 cup consommé

1/2 cup sour cream

1/3 cup port wine

1  can sliced mushrooms

       garlic powder

       strips of bacon

 

Rub hens well with garlic & Tony's seasoning.   

Brown the hens in the butter on all sides.     

Arrange hens in a shallow roasting pan, cover the breast with the bacon strips.

Add the consomme' & wine, cook in a 400 degree oven for 45 to 60 minutes until tender, basting several times with pan juices.

When ready to serve remove bacon .

 

SAUCE

  Make this sauce to pour over hens when serving.

Sautee' the mushrooms in butter, add to the pan juices.

Slowly stir in the cup of sour cream,1 tsp. kitchen bouquet.  Check seasoning.
If sauce is too thick add in a little consomme'.
