CRAWFISH PIROGUES

8  pistoletts

1  stk. butter

1 lb. peeled crawfish tails

1 cup mushrooms (sliced)

1/2 cup yellow onion (chopped)

1/2 cup bell pepper (chopped)

1   tsp. garlic (minced)

1/2 cup mayonnaise

1   cup mozzarella (shredded)

1/2 cup black olives (sliced)

 

Remove top 1/3 of bread & scoop out .    

Sauté onion, garlic, bell pepper then add crawfish with fat and simmer for 5 to 6 minutes.     

Add mushrooms & remove from heat.   

When crawfish have cooled blend in mayonnaise .       

Cover crawfish mix with cheese & top with olives.     

Place in an ungreased pan and bake at 350 degrees until bubbly .
