DUCK or GOOSE CASSEROLE

2   ducks

1   large yellow onion (chopped)

3   ribs celery (cut large pieces)

1/2  cup butter

1/4  cup flour

 2  small cans sliced mushrooms

1/2  cup light cream

1   tsp. parsley (chopped)

1   pack Uncle Ben's rice

    Salt & pepper to taste

 

Boil duck in water with the cut onion & celery  1-1/2 hr.

Remove duck, let cool & de-bone, set meat aside.

Cook rice according to pack..

Melt butter in a skillet & sautee' onions for 4 minutes then stir in the flour & add mushrooms with the liquid.

 Add cream, parsley, salt, pepper,        

 cooked rice & duck meat in a 2 quart dish. sprinkle with slivered almonds.

Bake at 350 degrees for 25 minutes
