ETOUFFEE’ (ay-too-fay) - Literally means smothered. In this case Crawfish tail meat is smothered with onions, peppers and
seasoning with a light roux base, and is served hot over rice.

Although Lasagna is traditionally an Italian dish we offer it with a Cajun flair preparing with with Cajun seasonings.
